Silverside is a lean roast which can be slow cooked and used for superb tenderness and flavour. Our Silverside Roast is sourced from local Irish farms and is 100% grass-fed which ensures it is high in Omega 3 and full of vitamins.

The Silverside Roast is a lean cut of beef with less marbled fat than other cuts and a wide-grained texture.

To roast, preheat your oven to 180°C/gas mark 4. Place the Silverside in the centre of the hot oven and cook for about 25 minutes for every 450g in weight, plus another 25 minutes (timings can be adjusted depending on how well done you like it). Baste the meat regularly as it cooks; when it is ready, remove it from the oven, wrap it in foil and allow to stand for a good ten minutes before carving.

Serve with gravy or mustard sauce, onions, carrots, cabbage or your favourite veg.

Cabernet Sauvignon, Pinot Noir, Syrah

Silverside is cut from the hindquarters, and will typically feature a wide grain with very little fat.
